Healthy Eating - Autumnal Goats Cheese Salad

Hello My Loves



I am a big healthy eating and fitness fanatic as you all know by now!  I believe that eating the correct foods, along with regular exercise, is essential for good health and general well being.  I eat good quality produce 80/20, which means 80% of the time I eat good foods and then 20% of the time I let myself eat the cakes and chocolate which are my major weakness.  McDonalds and fast foods do not appeal to me at all and in fact the odd time I have had them, I have felt sick afterwards!



One of my favourite types of meals is a salad.  They are so quick and easy to make, as well as being really easy to pack into a lunch box and take 'on the go' too.  We all have busy lives and no one has time to be cooking complicated meals and then trying to haul them around with us to work or school and re-heating them.  It's so effortless to just throw in your favourite foods to a bowl, add some dressing and perhaps some bread et voila! Easy-peasy! 



So when the lovely people at Florette asked me to re-create one of my favourite salads from the 'A Salad For All Seasons' salad recipe book I was so excited to put my twist on one of the recipes.  I used the Florette Duo pack and added some goats cheese, blueberries, pumpkin seeds, cherry tomatoes and a drizzle of extra virgin olive oil.  


I am crazy about Goats Cheese Salad.  It is something I order time and time again in restaurants, sometimes with a cheeky glass of prosecco to accompany it!  There is something really luxurious and indulgent about a good quality goats cheese with crisp leaves and some lovely fresh vegetables and fruit. 



Fruit in a salad may seem strange for some but I love some blueberries with goats cheese which are a natural antioxidant and superfood.  The taste combo of all the ingredients in this salad is simply amazing.  This salad is full of vitamins and minerals that are vital for a healthy body and mind.  Not to mention the beautiful colours would look great at a dinner party table!
