Easy-Peasy Healthy Snacks and Treats

Happy Monday! I used to hate Monday mornings, but since consciously living a more positive life, I try to look at each Monday morning as the start of a new week with new opportunities. It really has changed my perspective on the start of my week.  I now think to myself of a Monday morning 'I wonder what great things this week will bring'. 

For today's post I thought I would share some of my favorite healthy snacks and treats that are easy-peasy to make! I am quite good at cooking, but baking has never been my forte, so if I can make these treats, than anyone can!

I eat clean 80/20, which means 80% of the time I eat really well and 20% of the time, I lighten that up and eat some full fat treats! Monday to Friday I exercise every day for an hour, I run on my lunch and I do power-lifting once a week with my personal trainer, so its easier to follow my 80% eating clean during this time because I guess I'm in The Zone on weekdays. 

Then on the weekends, Ill have a takeaway if I fancy, perhaps a curry or a burrito laden with sour cream. Ill eat a bit of cake if I like, or have some sweets. Cake and chocolate really are my cryptonite. I adore them. By allowing myself some of these not so healthy treats at the weekend I don't feel like I'm depriving myself during the week. It might not work for everyone, but it works for me!

I am lucky because I really like good clean food. I love vegetables, fish, fruit, nuts and so forth. While I will eat a takeaway once a week if I want to, I never really feel great if I eat stodgy foods like pizza or burgers, so I tend to stay away from those in general. I feel so yucky after eating those type of foods that its just not worth it to me. So for me a takeaway will consist of a curry with lots of vegetables or a burrito with sour cream and guacamole and cheese - heaven! My mouth is watering as I write this!

So, during the week, when I am being 'good' I try to have tasty snacks in the house, so that if my hubbie and I get peckish, or get a craving for a treat, there is something there we can eat, without going to the shop and buying a Mars bar!

I have 3 go to current favorites that I want to share with you all;

1. Oat and Almond Butter Cookies

These bad boys are unbelievably good. I know they have some brown sugar in them - but I find that I use less than half what is in the recipe when making them and they are still amazing. I am sure you could substitute the brown sugar with maple syrup and add some more oats which would make them even more healthy!

These are perfect with a glass of almond or soy milk in the evening.

2. Peanut Butter Cups

I first ate these when I took a trip to Gasta Good n Healthy in Limerick a few months ago. These were so good and so healthy, I could not believe something that tasted so good could be so healthy!

The recipe is from this lady who has a brilliant blog for all things fitness and health.

3. Healthy Caramel Slices

These taste amazing and remind me of being back in college, in the University of Limerick and having tea and caramel slices over chats with friends. 

My hubbie literally devours these as soon as I make them! Loaded with great ingredients, its really hard to believe that these are healthy and good for you!
